Gill Meat Company is the direct-to-family beef program of Gill Ranches, a multigenerational ranching and farming operation based in Ontario, Oregon.
Our family has been raising cattle in Idaho and Oregon since 1879. Today we provide families across Boise, Eastern Oregon, and the Pacific Northwest with locally raised all natural beef they can trust.
We raise every animal ourselves — from calves to finished beef — right here in the Northwest.
Because around here, ranching isn’t just our business.

Premium Ranch-Raised Beef
We raise all natural grass-fed, grain-finished beef right here in eastern Oregon and western Idaho.
Our cattle are raised birth-to-plate, meaning we breed, raise, feed, and finish every animal ourselves.
Our cattle are finished on grain grown by our family or by neighboring farms we trust for exceptional tenderness, taste and marbling.
Our ranch follows regenerative and organic-minded practices, although we are not certified organic, producing healthy cattle and exceptional beef for the families we serve.

You place a deposit to reserve your share, then pay the remaining balance when your beef is ready. Pricing is based on hanging weight, which is standard in the beef world and covers the animal, processing, and standard cuts. You’re getting fully packaged, labeled beef ready for your freezer. It depends. For beef already on hand we are unable to make customization. If you’re on our waitlist for future beef you may be able to do some customization with our meat processor if you are purchasing a half or whole. Reach out to us when you order and we can help you.

Per pound, yes. It usually beats grocery store pricing, especially for steaks. Plus, you’re getting consistent quality across every cut.

Simple: flavor and consistency. Grain finishing adds marbling, which means more tender, better-tasting beef on your plate.
Cattle are ruminants (they have multiple stomachs), so they’re built to turn grass, hay, and grains into high-quality beef. They take feed we can’t eat and convert it into something nutrient-dense, all while making good use of pastureland that wouldn’t be suitable for crops.

Corn finishing adds marbling, which means more tender, flavorful beef that’s higher in healthy fats like monounsaturated fats. It also boosts calorie density, protein, and key nutrients like iron and zinc, giving you nutrient-packed meals that taste great right off the grill.
